I am not too sure what this would be called or if I am
inquiring about the right software. Is there a software
developed to block your server? Is there something so
your emails and personal information can't be traced? I
don't know if it is a firewall protection I should be
looking for or some sort of server protection software.
If anyone has any information I would appreciate it.

Your server? Look, unless you're using windows 2000 server edition or
above, please don't call your system a server: it gives a wrong
impression.
No, there's always a way that emails can be traced. Use spam protection
(Spamassassin) or get a better email client for filtering that stuff
(Kmail).
You ought to use a firewall at home, if possible, but you should also use
good antivirus and keep your system up to date using windows update. These
ought to be basics, like changing the oil on your car every so often ...
