is there a way to rename a folder (user profile) to a different name instead of deleting the user account.

Ex( I create a user called Class, it then created the folder called class under documents and setting folder. I want to be able to rename that folder.)

Or is there an easier way of keeping that users settings and moving them to the other folder.

You could open either the MMC or Control Panel. In Control Panel open
Users and Passwords, Advanced tab, Advanced button, right click the
user and select rename.
