On using right click of the mouse (e.g. right click on a
file or folder in Windows Explorer)...the menu display
opens to the left.
How can I change this so it opens to the right.

Hi,
It depends on where and when. But beings you mentioned WE, go to
Start/Run/Regedit and check your settings here:
HKEY_CURRENT_USER\Control Panel\Desktop
MenuDropAlignment
0 = left, 1 = right
