When right clicking on start & see open, explore, .etc some programs add shortcuts to this menu. How can I remove items from there? Appreciate any help.

You can't, you shouldn't, why would you want to?
It requires complex registry editing, all to no real end at all. Concern
yourself with things that *need* cleaning up.

Go to Start/Run/Regedit and navigate to:
