I would like to know how to customize the "New..." menu
(for creating new files) that is an option when right
clicking in an explorer window or the desktop. There are
artifacts from programs I don't have anymore on the list
that I would like to get rid of.

You can do this in TWEAKUI.EXE > Templates. TweakUI is available from
http://www.microsoft.com/windowsxp/pro/downloads/powertoys.asp.
