A previously failed or interrupted install has left an initial login
message which offers me the choice of booting into MS Windows XP Pro
or Cancel Windows XP setup. If I either wait for the delay to end or
hit a key it install fine and runs fine. Its just annoying that this
other option comes up every time I boot up the Pc - is there a way of
easily getting rid of it?

Do a search for "boot.ini" sometimes it is in the root of C: sometimes it
is windows.
Open it up in a text editor and remove the startup option you do not want.
WARNING-THIS MAY CAUSE YOU SYSTEM NOT TO BOOT! Be careful when editing this
file and make a back up of it.

Do this:
Run a command prompt and use bootcfg to delete the unwanted menu options.
bootcfg /? to get help... you are looking for bootcfg / delete /
EG: bootcfg / delete /ID 2
