I am upgrading from my ECS K7S5A v. 3 motherboard. I have an AMD 1700XP
CPU. 384 MB PC2100 SDRAM.

I wanted to get a recommendation on a new set up. Thanks.

You omitted the most important thing... how much do you want to spend?

And do you want to also upgrade CPU and RAM?

Take a look at the ASUS P4C800-E Deluxe (that is the exact model name, every
character is significant). Intel 875 chipset, SATA, RAID, onboard gig lan,
USB2. Best of all, you can use your existing memory. I am running Windows XP
Pro with 4GB PC2100 memory and P4/1.6A CPU. This motherboard will take all
existing Intel 478 pin CPU's through the 3.2GHz. Cost is just under $200.

Is it true (I read it somewhere) that Intel systems are better for video
editing than AMD. Maybe it was because the Intel was using RDRam(?),
Rambus(?), but I am not sure.

So, I can use the DDR memory from my AMD Motherboard?

I run DDR in a couple of AMD systems.
