Really, any place you wish. As to what program to use, that will depend on
how complex you want to make it. A simple text document may suffice or it
may take a data base for sorting, etc.

scanned documents might not be able to edit these.
try wordpad or works word or office word.
use edit - paste

The newer version of word have ocr built in.
