Dumb newbie question I know, but when I right click on
my 'All Programs' icon in the Start menu to explore and
therefore modify it, I don't see all of the menu items
that appear on the Start menu. how do I display and then
alter all these icons?

Also choose Open All Users.

Try Profile-All Users.
