An employee left our company and we suspected he deleted several important files. Is there anyway to track his activities before he left and recover these files? (recycle bin is empty and we don't back)

Not really. A very expensive data recovery company might be able to get them
back, but for all intensive purposes if you've been using the machine then
they are gone. Always backup, expecially in a company environment. Every
business should backup and use a fireproof safe to store the backups.
Without backups, if your drive dies someday, so does your business.
