How can I remove a program from the Recommended Programs
list in the Open With dialog box?

Click Start, Run and enter REGEDIT Go to:

HKEY_CLASSES_ROOT\.<ext>\OpenWithList

Where <ext> is the file extension of the file you're working with. Expand
this branch and you'll see an OpenWithList subkey. Under this are one or
more subkeys that correspond to the applications in the list. Right click
the appropriate subkey and select Delete.
