Download and install TweakUI:
Microsoft PowerToys for Windows XP (TweakUI)
http://www.microsoft.com/windowsxp/pro/downloads/powertoys.asp
After installing, go to Start > Programs > PowerToys for Windows XP >
TweakUI. Expand "My Computer" and click on "Special Folders".
You can easily change the location of the folders there.

Ian--
All good suggestions, and Tweak UI gets a lot accomplished conveniently.
You can also do this with a few clicks following this KB:
Change the Default Location of the My Documents Folder
http://support.microsoft.com/default.aspx?scid=kb;en-us;310147
