I have Microsoft Wireless Optical Desctop for Bluetooth
It include Microsoft Wireless Transceiver for Bluetooth
Keyboard and mouse working well
But when I try to connect my phone Nokia 6310i (firmware 5.50), I can use
only "Dialup Network (DUN)" profile from my phone\
How can I use other profiles, such as "FAX" and "Nokia PCSuite" ?

It's highly likely that the applications you're trying to use need the
networking ability that the current MS Bluetooth drivers do not have.
There's a fairly comprehensive guide to Bluetooth, focusing on the MS

During their tests they were able to use a mobile as a modem but were not
able to synchronise files - diary etc.
Although the guide quotes a MS source as stating that MS are developing an
update to the drivers to include the network function there is, as yet, no
confirmed date for this update's release.
The only other suggestion I have is to try contacting Nokia to get more up
to date info from them.
