Is there a way to change what appears in the list of
choices when you right click on a file in Windows
explorer? I am using Windows XP.

What's the filetype?
The context-menu entries are stored in the registry, varies for each =
filetype.
Example:
HKEY_CLASSES_ROOT\<ProgID>\shellex
--=20

Finding this helped me learn how to remove an unwanted item in my "right click" menu on my mouse. Many thanks.
