Question: If I install XP SP2 RC1, how does that effect upgrading to final
release of SP2 on the same machine?

Usually you would need to un-install any Release Candiate (RC) software
before installing the Final, and official, version.

In addition to Will's link you will have to uninstall RC(x) before
installing the final build.

When the final version of SP2 is released, it will not install over
a beta version of SP2. You'll have to uninstall SP2-RC1 as a
prerequisite to installing the final version of SP2. If you experience
difficulty uninstalling SP2-RC1, then a "Clean Install" of Windows XP
will be required, although a "Repair Install" may be a viable alternative.

Wasn't sure if RC1 even could be installed, or if there were issues with it.

It would be strongly advisable to do an uninstall of the provisional SP2
(which is provided and works quite easily) before doing the final
install.
You might want to hold off for RC2, which is expected quite soon now
And bear in mind that there is no guarantee for Beta software like even
an RC release: it is intended for evaluation, and you should not put it
on a production machine unless you have a certain backup method to
recover from complete disaster
