I deleted a document by accident and was wondering if it
was possible to un delete it after the recycle bin had
been emptied. Thanks!

You can use third-party software like FileRecovcery
(http://stud.upb.de/~n9180779/rescue/) for to do this.

This freeware app works nicely with XP http://hccweb1.bai.ne.jp/~hcj58401/
You should download the app onto another system then run it and extract to a
floppy. You can run the file off the floppy on your system. This will help
to prevent overwriting the document.
This app will allow you to recover the lost file to the same partition that
it was deleted from. However it is not advised to do that unless absolutely
necessary. Meaning that the file is too large to fit on a floppy, you do not
have an addition partition or second hard drive, or you don't have removable
storage like a zip drive or CD Writer that uses packet writing like Direct
CD.
