I have Windows XP Pro installed on my machine. Can someone
tell me what happens if I don't register my copy?

Not a thing. Registration is entirely optional.

Perhaps you meant to ask "what happens if I don't *activate* my
copy?" Activation is required. If you don't activate, Windows
will stop working except in Safe Mode after 30 days.
