Greetings Jeff,
Unfortunately Messenger itself doesn't have this capability. You can however find
third-party patches and tools which will allow you to login as offline, you can find these on
http://www.mess.be, look in their download section (more specifically the 'MSN Messenger
Addons, Bots, Tools & Tweaks ' section) for 'JnrzLoader', 'Nega Patch' and others. Keep in
mind that these are unsupported and may cause some odd behavior.
There are also some newer tools which allow you to be "invisible" to some users. For instance,
Messenger Discovery:

It is also possible to 'block' individual contacts from
seeing you.
Go to Tools > Options > Privacy Tab > click on the name
you want to 'block' and then click on 'block'.
There is nothing to stop you doing this to all your
contacts, if you wish
