Am I correct in believing that in order to traverse a NAT/firewall, I need a
NAT/firewall with UPnP support?

Alternatively, do you know any way to force the RTP (media/video) stream
over specific ports, as can be done with "real" SIP-phones?

That is correct, and no, you cannot be specific with the ports.
