Problem: the cat had her way with the computer for a short time. Taskbar is
now twice its normal size and the time/date is the entire time and date
spelled out instead of hidden - I mean the clock used to appear but the date
was hidden but appeared if I layed the mouse on it. I want the time/date
back the way it was.
Most of all I want the taskbar to be back to its single height. I have
tried to take the mouse and push it down but it only pushes it below the
screen or is the double height.
Also, How do I rearrange items in the quick launch bar?
This is a little thing but driving me bonkers.
Can anyone help?

I do not know whether this will fix your problem, but you could try
unchecking the "Lock the Taskbar" item that appears in the menu when you
right-click on the taskbar. When you've finished resizing and re-arranging
everything, you can check that option again to make sure mishaps don't
happen anymore.

For the taskbar: If you are unable to get single row, something has been
resized and is forcing the double row. You just need to figure out what
that "something" is.

-- In your Quick Launch toolbar, right click a blank area and check that
View> Small Icons is selected. While large icons may be easier to see,
they force the taskbar to be taller when it is positioned at the top or
bottom of the monitor.

-- Right click the desktop and check the dimension for "Icon Spacing
(Vertical)" under Display Properties> Appearance> Advanced. This setting
effects icons on the taskbar as well as on the desktop. If set too high,
it will also push out a single row taskbar.

-- If still no luck, try removing your theme and reapplying it. The
default dimensions for desktop and taskbar items will return.

For Quick Launch: You can drag and drop icons within the toolbar. As you
are moving an icon, you'll notice an I-bar cursor within the toolbar
that is showing the position that the icon will be dropped to.

Caveat: If you leave the Quick Launch toolbar in place, the icons will
pretty much stay put. If you remove the toolbar and then add it back
again, it is very likely that you'll find that the icons have resorted
themselves to a different order. You'll need to drag them around again
to get them in the order that you want.
