I want to brighten up the videos while encoding.. how do I go about doing
this?

In MM2? Edit Movie->Video effects->Brightness, Increase. Apply to segments
as required. Will tend to wash things out if overused. FWIW, As I found,
segments that appear too dark using an older analog monitor will look just
fine on a digital LED monitor. I had to redo an hour of video after buying
a new monitor,
