I was wondering if anyone knew how someone could see timestamps of a
conversation without actually enabling the IM logging feature.

Pretty much I had a conversation with a contact and someone was able to see
I had a conversation at various times but could not see the actual
converstaion. How is that possible and where is that information stored?

Greetings,

There are some third-party utilities to add this to MSN Messenger, but nothing that I've seen
for Windows Messenger.

As well, they've actually added this feature in Windows Live Messenger (aka MSN Messenger 8),
which you can download here:
http://ideas.live.com.
