Every time I try to open attachment files on e-mails, XP
uses Adobe Acrobat. How can I get it to try other
programs to open files?

What program a file is opened with depends on its extension. The
reason XP uses Acrobat is presumable that the files have a .pdf
extension and that extension is associated (as it normally is)
wih Adobe Acrobat.
Are you finding files that are not pdf files that XP is trying to
open with Acrobat? What extensions? If so, you make incorrect
associations set up.
