HOW to change e-mail address in messenger
 
Running messenger and xp. The wife got a new job and needs to change the
e-mail address listed. I don't see an option to do so. How can this be done?

HOW to change e-mail address in messenger
 
Her current email address is associated with her Live ID so she'd have to
create a new Live ID associated with her new address. More at
https://help.live.com

create a new Live ID associated with her new address. More at

HOW to change e-mail address in messenger
 
The problem now is the wife doesn't remember her password! Password recovery
wants to send the reset info to her old e-mail account which was deleted. Is
there anyway around this other than setting up a new account?

Keep in mind that you cannot change your MSN Messenger log-in email address if it is a Hotmail address. In this situation, create a new, separate account using a different, non-Hotmail address (see Resources). Otherwise, access the MSN website (see Resources) and enter your login information into the appropriate fields.

Click on the "View or Edit Your Profile" link.

Select the option to change the email address associated with your MSN account.

Enter the new email address you wish to use going forward, into the appropriate field. Save the changes you have made to your account.
