As I recall, their process has you download and run an app from them
that permanently switches you out of S mode. The app runs temporarily
and transparently in the background. I suspect it makes a ton of
registry changes after having to change permissions on them.

I've not seen anyone get S mode unless they were using a school's
laptop. Is the computer your property, or someone else's? If the
school were smart, it would install an inventorying client on their
property that they loan out to student which reports back to them what
is on their property, and let them burn any student that violates the
setup of the school's property. If I bought a computer that includes
Windows 10 and found they dumped S mode on me with no mention before the
sale, I'd take it back (in a mess in a big carton) and demand a refund
for them selling to me what I did not agree to buy.
