an instant chat; not with the person I normally talk, but with some
clerk at the central office whose job is "chat" with clients.

So these platforms are quite secure/private.

OTOH, solicitors (notaries?), real estate agents, etc. are quite happy
to send/receive all kinds of very personal information by normal e-mail.
Things would come to a halt if they didn't.
