I can't get rid of the right-most partition
("unallocated") on this SSD (Disk2) which is
taking up a lot of space.
I've tried reformatting just this partition and
forming a new simple disk with it, but I can't
delete it. I want to expand the left-side
partition to include it.

You were almost there when right side was "unallocated". You simply had
to have the good partition expanded to use the unallocated space. It
can't expand into allocated space.
