XML Documents
An XML file will display as text unless it transformed into HTML by means of
an XSL file. Does your XML file contain a link to an XSL file, and does that
XSL file actually exist?

It maybe helpful to post a link of what you are looking at here. XML
is not one type of file format, but rather is a way of defining file
formats. Its possible that IE may use a helper application inititally,
but this association is lost when the file is saved and then
re-opened.
