Rather vague. Most of what you do? Which is what?
Java? Why? You're describing a services kiosk with
limited functionality and limited privacy. Sandboxing
makes the former inevitable. Cloud makes the latter
inevitable. Is most of what you do shopping? If not
then why put it on someone else's computer and why
limit the functionality by using wrapper systems like
Java?

On the other hand, if shopping and services via
kiosk is what you want then you need only wait.
Win10 will probably get closer with every update.
Or you could switch to an iPad and use apps.
