I've had a lot of non-touch systems come through the shop and so far I
haven't seen one that defaulted to the Desktop UI, including my own systems.

It's just a default, you can set whatever you actually want.

That's a bit misleading since it implies that you can decide to use ONLY the
Desktop UI.
