They do - it's you who's making it damn hard. Control Panel
Programs and Features Turn Windows features on or off. Clear the
Games box.

Does that actually remove all copies from the machine (including from
the more-or-less-image of the install DVD), or just remove their
shortcuts?


Just removes the shortcuts. All of Windows 7 is always installed, but
there is really no reason to actually delete anything. Deleting bits and
pieces to free up disk space in these days of terabyte drives is silly.
