My preference is to turn off updates.

How?

I had Windows 10 Pro updates (accidentally, on purpose, I don't remember
how I did it) turned off for more than two years, but finally, in January,
an update bricked my Windows 10 Pro system.

Now I have a lot less customization, such that Windows, once the "pause"
period is done, updates itself. It just updated a couple of days ago, since
my pause period expired, and it wouldn't let me set a new pause period.

I /know/ updates can be stopped (because I did it) but I don't know what it
was that I did that stopped them.

Does anyone?
If so, please let me know because I don't want my machine updating until I
want my machine updating.

It runs in my mind that if the original Windows 10 pro the updates could
be shut off, or disabled for a period. It is possible that over the
updates that function has been remove.
