printer settings on XP

I have an HP K80 installed on a W2K Server, All of my XP
machines cannot change the default print settings from
color to black & white. When i change the settings on the
individual XP machines, it doesn't save it. I will change
it, then go back in and check it again, and it is color.
Anyone got a clue for me?
