Err change to black in the printer properties - hardly rocket science!

I wish that helped. I looked in printer properties, under
color management, but all i see is the ability to toggle
back and forth between automatic and manual color
management. or i can add a new color profile, but it's
not clear which one i would need.

Not sure what you mean. Somewhere in your printer properties (I've never
used a PSC1200) there will be the option to change between black and
colour - you have a colour radio button and a black radio button, click the
black one.
