Default Definitions of Processes

Where can I go to find definitions of processes like:
justsched.exe
csrss.exe
lsass.exe

There are 30 items in my Windows processes list.
Surely I don't need all of them everyday for the simple
things I do with my computer.

How can I learn which ones to end, and which ones to
leave alone? For example in Windows 95, I only needed
Explorer and Systray; turned everthing else off.
