Default Double-page scans to single-page ones?

From the Internet some scans of books display two
pages at once.

These are harder to read on tablets.

Is it possible to convert these two-page scans to
single-page ones with Acrobat?

Maybe with the "extract" function?

Without a sample page it is difficult to say but have you tried in acrobat:

From that second link, even though the mutool documentation
page doesn't show a "poster" option, it exists in the
executable. This is "normal" for this particular software
source. They concentrate on writing software mostly.

-p - password
-x x decimation factor (default 1)
-y y decimation factor (default 1)

There are two ways to get a two-up view in Acrobat.

One is by using the preferences in Acrobat Reader
and selecting "facing" as the viewing option,
instead of "single".

But, there are evil scanner software packages, that
take two scanned images (two passes) and jam the results
into one logical page. These need an actual transformation.

and that's what the "poster" option is for. You can
still select "Facing" in the actual PDF Reader and
make it look like two pages are on the screen at
the same time. To see one page on the screen select
"Single" or "Continuous" in the Reader application.

I use mutool mostly for its "clean" option. I don't
think "poster" is in the older version I use.
