Default Smart?

Does anyone know how to find out what type of Smart temperture Sensor your motherboard is using? Also how could you go datalogging the information from the sensor? I dont want to use motherboard monitor, speed fan or any of the others that are already there. Any suggestions of what software packages i might use?

Thanks! your very good..but ive decided to use motherboard monitor with a c interface to log the data i need.
