Default How to end background processes and how do they come?

I've noticed there is a lot of background processes in task manager that
require a lot of resources from PC. I've tried to turn them off but they are
always starting again each time I run an application. Some of those
processes are server host like. If I shut down them, then computer runs
smoothly. The fact is that I can't control theses background processes like
I usually did in Windows XP. The entire system feels like if it was alive.
The question is how can I trust modern windows system if it makes the
machine agonize, and in the other hand, should I upgrade to Windows 10, is
this new system quitter?

I would downgrade to W7 rather than "upgrade" to W10.
