It is possible to uncheck the backup option in the preview? I plan on
reinstalling my copy of XP Home anyway.

No, that is to prevent people from inadvertently not saving the files.
I think that was a problem with SP2 RCs.

As long as you are really sure, you can safely delete the uninstall
files directly:
http://www3.telus.net/dandemar/spack.htm
Once you do that, you may need to format and start over in order to
install the final version of SP 2.

Is it possible to modify a configuration file or something like it? The
backup take so much time I wanted to avoid it.

Greetings --

No, there isn't. Because the release candidate version of SP2
will have to be removed _before_ the final version can be installed,
the option to "not be able to remove it" is not available. If you're
concerned about hard drive space, and are absolutely sure that you'll
want to completely replace your OS before installing the final SP,
just let it install as is and then delete the archive folders.

The real service pack is out on Tuesday as far as I know I would not even
bother with anything else !

"Mid 2004" is the official date:

RC 2 of SP 2 is due real soon, possibly Tuesday.
But since RC 2 is not out, there is almost no way for the final SP 2
to be released any time soon.
Possibly one to three months.
