Unlock the taskbar and resize it so it is double width. Of course, that
takes up screen real estate, so which do you want more-date or screen space?

Default Date on taskbar

Hi,

This can be done be increasing the hight if the task bar. Right click on the
task bar and unlock it. Put the cursor on the upper edge of the task bar
and drag it up to double it's size. This will allow room for the date.
