Mandating Default Printer on Roaming Profiles

How can I mandate a specific printer as the default printer
in different sections of a large lab? Student users have
roaming profiles carried to different locations on campus.
Because of the roaming profiles I can't use the default
user profile to define the default printer.

Can I use the All Users profile in some fashion or the
PrintHood folder?
