How do you un-set a file association

Start Acrobat, click "Edit", "Preferences", "General", then scroll to
the bottom and click "Select as Default PDF Handler".

Good thought. Unfortunately it just refers back to the same Win-10
setting app, and says to change the settings there.

As mentioned by another poster, you may be overlooking the hidden scroll
bars on the right side of the "Default Apps" page. Near the bottom of
the page is "Choose default apps by file type".

cannot see more options.

On the right hand side I see a thin white line. The top of this line
aligns with the "Choose default apps" heading. The lower portion of
the line aligns with the "Music player" heading.

Hold your mouse and position the pointer arrow over this white line.

Does the slider bar expand to a wider bar (similar to other slider
bars)?

If so, position the mouse on the slider bar and, holding the left
mouse button down, slide the bar downwards a couple of inches or so.

Do you now see additional options such as:
"Choose default applications by file type" ?

If so, after about five seconds you should see a long list of file
extensions on your screen. Scroll down to ".pdf". You should see an
icon and the name of the current default app for PDF files.

Now click on either the icon or the app file name and you should see a
list of apps which can read PDF files. Click on the app of your
choice and you should see the name of your chosen app replace the old
default app.

If all the above worked for you, you can now back out of SETTINGS.

One other point of note: if you use a file manager, the new app name
will not replace the old app name until you restart your file manager.
You can do that any time that suits or the next time you boot your PC
it will happen automatically.

Hope all goes well!

I get the impression that Eric does not understand how he can see more
data in his "Default apps" panel than he is currently seeing. I
suspect that the black background he has for the panel is not making
this task easy for him, in that he cannot easily see the thin line on
the right hand side of the panel where he could enable the slider bar
and he could then move his vision down to the bottom of the panel.

Alternately, he could expand the size of the panel by placing the
cursor on the top edge so that he can see the cursor change to a
double headed arrow and then he only has to hold down the left mouse
button and drag the top edge to the top of his screen.

If he repeats that exercise on the bottom edge of the panel he could
then expand the panel to its full vertical height and he might see the
additional items that have been mentioned here more than once, in
particular "Choose default applications by file type".

If he gets this far, then he only has to left click on that option and
after a few seconds he will have hundreds of file types to choose
from. I have previously mentioned to him that he then has to navigate
to ".pdf" and left click on either the icon or application name
that is currently shown as the default program for PDF files. This
will give him a list of apps that he has installed on his PC which can
read PDF files. He then only has to click (or maybe double-click) on
his preferred app.
