Default (I really HATE Outlook 365!) How do I ...

in Outlook 365:

1. Have the cursor - and my .sig - appear _below_ the original text in a
reply?
2. Set up a plain text signature file? (The fancy one changes "-- " to a
solid square!)
3. Turn a reply into plain text, with " " before the quoted lines?

And yes, I _have_ googled.

Not sure about that one.

2. Set up a plain text signature file? (The fancy one changes "-- " to a

Create the sig in a text editor, then paste it into Outlook's Signature
pane. There's no problem with _having_ "-- " in a sig; the problem is when
you try to _type_ it directly into the sig window. You should be able to
paste it, though.

3. Turn a reply into plain text, with " " before the quoted lines?

I think that's in File, Options, Mail, Replies and Forwards, When replying
to a message = Preface each line of the original message, then put into
the box below. (Should already be the default, but grayed out until you
make the change above).

Expanding on that, I meant that I think the cursor is always initially
placed at the top, which makes sense to me because you work your way down
as you read and reply, at least sometimes. As for the sig, it's always
placed at the bottom, right? You can copy/paste it somewhere else, I
suppose.

Probably not what you wanted to hear, so I'll let others reply with better
info.
